Bentonite or natural bentonite clay is a traditional material for removing the natural turbidity of wine after the end of fermentation processes. Its peculiarity is its absorbent property, thanks to which the clay is excellent for pasting grape wines. Bentonite cleans mash or wine from harmful impurities, spent yeast and other processed products. Bentonite, getting into the wine, attracts and absorbs these residual fermentation products and falls with them to the bottom in the form of a thick sediment. Improves taste, brightens, removes sediment and unpleasant odors. This way the yeast will precipitate in an even layer and your product will be lighter in color. Application for strong drinks: Add bentonite to hot water, observing the proportions of 0.5 liters per 1 tablespoon of white clay, then mix until a homogeneous mass without lumps is formed. Next, in a thin stream in a spiral, pour the solution into the mash, mix and leave for 24 hours at room temperature. We drain the mash from the sediment through a thin tube and begin the distillation process. Application in winemaking: Pour dry white clay with cold water, observing the proportions of 1:10 (one part of bentonite to ten parts of water) and leave for 10-12 hours. For example, to clean 10 liters of wine, you need 30 grams of white clay and 300 ml of water. The clay will then turn into lime. Be sure to add water to betonite before clarification so that the mixture becomes liquid. Now you can pour into the wine in a thin stream, using a straw for convenience. After 5-7 days, you need to drain the wine from the sediment.
