DistilaMax MW are used in the production of malt whiskeys where the presence of fruit tones is a desirable characteristic. Figure 2 compares the ester production of DistilaMax MW and 2 other yeast strains used in whiskey production in Scotland.
Fermentation of malt wort for the production of whiskey: 0.50 - 1.0 g per 1 liter of wort (dosage: 500 - 1000 ppm).
